I haven’t posted in a while, so here’s another quick post about one of my favorite easy meals. You’ll need the following:
- one or two cloves of garlic crushed or minced
- butter (about 2 tsp)
- one bell pepper (anything buy green)
- 6 oz. of mushrooms or mote (they cook down a lot)
- spaghetti or whatever past you’d like
- shredded cheese
- salt and pepper to taste
- tomato sauce
While you’re cooking the mushrooms and bell pepper, you can boil water and make pasta on the side. Instruction for the mushrooms and bell pepper are as follows:
Start with melting butter in a frying pan on medium heat. Then, saute the garlic until it just starts browning. Immediately throw in the mushrooms and saute some more until they start to soften. Follow this with all of the bell pepper. Saute some more until the mushrooms are fully cooked. (Eat some of it if you can’t tell when they’re done by just looking and smelling.) Throw in the cooked pasta with the tomato sauce and cheese and mix!
If you like your bell peppers more cooked, throw those in before the mushrooms. Once they begin to soften, push them to the edges of the pan and then put in the mushrooms. Saute the mushrooms in the middle of the pan until done and then mix them all together.
